Aperture Priority is one of the basic camera modes that allow you to take control of your camera settings. Specifically, Aperture Priority allows you to select an aperture and an ISO, while your camera selects the shutter speed. This is in contrast to Auto mode, where your camera selects all settings and you simply press the shutter button, and

It’s something you should familiarise yourself with as you learn more about photography. But it’s not a mode you need to use all the time. Having full control over your settings can be time-consuming.
I’m learning wedding photography, but I’ve found my best results come from using manual mode with flash indoors (and understanding how the flash/ambient balance thing works), and aperture priority outside, varying exposure compensation or flash exposure compensation as necessary.

If the light itself varies, then auto is the way to go, but if the light is Aperture priority mode allows you to specify the aperture to use when taking a picture. The camera does everything else for you. Similarly, shutter priority mode places an emphasis on shutter speed. When using that mode, you pick the shutter speed leaving everything else to the camera.

Aperture priority is very much favoured by wedding photographers who don’t shoot in manual mode. At times weddings move at a very fast pace, so aperture priority is perfect for taking care of depth of field while the photographer concentrates on focus and composition. Even manual mode wedding photographers use aperture priority at times.

However, I am curious what the advantages are for shooting in manual mode over using aperture priority and locking the exposure (AE-L).
